This week, we continue our tour of the Charente with a classic family recipe! The "Galette Charentaise", aka "dry cake" as we called it, is a must in our family. Simple to make, perfect to accompany a coffee, we share this family recipe with you!
This recipe, which has been in the family for several generations, is made with ingredients that are extremely easy to find. As for the canelé, everyone has his preference: individual cake or not, more or less crunchy or thick... it's up to you to find your favorite.
Concerning the ingredients, nothing simpler but be careful, we use butter AOP Charentes Poitou to stay in the tradition. Between land and sea, the PDO extends over a large territory and brings together nearly 3500 producers. It goes perfectly with oysters from Marennes or potatoes from the Ile de Ré.

Option: to make it a little more Charentais, you can add a tablespoon of Cognac!
Work the butter, sugar and whole egg well. Gradually add the flour, yeast, egg yolks, salt and vanilla.
Spread in large buttered moulds or cut out small circles for individual portions. Using a brush, brown the dough (1 egg yolk + 2 tablespoons of milk), and draw crosses with a fork.
Bake for 15 to 20 minutes.
