And yes ! We can perfectly replace rum of the super famous recipe with pineau and see what it looks like! This is how we do it:
In a tall glass crush 8 fresh mint leaves with a pestle
Add 6 pieces of lime cut into small pieces
Add 4 teaspoons of brown sugar (or 12 teaspoons of cane sugar)
Fill the glass with ice cubes
Add 6 cl of white Pineau des Charentes
Mix with a large spoon
Complete with sparkling water
Decorate with a mint leaf

This cocktail is an original creation of the Gravity Bar in Paris. It dares to mix two alcohols: pineau and white wine. The aromas are enhanced by thyme, honey and lemon. Here is the recipe:
In a glass pour a spoon of liquid honey
Add the juice of a lemon wedge
Mix well to dissolve the honey
Fill the glass with ice cubes
Add 6 cl of white Pineau des Charentes and 3 cl of white Charentais country wine
Mix with a large spoon
Complete with sparkling water
Decorate with a sprig of thyme and a slice of lemon

This cocktail brings together two products born in Charentes: cognac and pineau. It can be made with pineapple juice, orange juice or multifruit. Here is the recipe:
In a glass, pour 2 cl of Pineau Blanc and 4 cl of cognac
Add ice cubes and a little bit of grenadine
Top up with fruit juice
PINEAU SPRITZ
A very old pineau des Charentes will be perfect to revisit this classic aperitif. A creation of 1 or 2 cocktails, delicious! For that you will need:
6 cl of very old Pineau des Charentes Bache Gabrielsen
6 cl Prosecco, sparkling wine
3 cl of sparkling water
Topping: orange slice and thyme sprig
PINEAU SOUR
6 cl of white Pineau des Charentes
½ yellow lemon
1 dash of sugar syrup
1 dash of egg white (about a teaspoon)
In a shaker half filled with ice cubes, pour the lemon juice, the sugar, then the Pineau des Charentes. Mix. Add the egg white and shake. Serve in a cocktail glass.
